I'm not a builder, so I can't help you with specifics. But I'll make two recommendations:
1. Look for a contractor, not a feature. If you find a feature that no contractor in your area has experience installing, you are choosing to be the "test job" for the contractor you do hire! Unless you have the money to easily afford a do-over, that's not a good place to be. I've repeatedly seen pool owners get into trouble by hiring contractors to do work they've never done before.
2. If you *still* want to look for a feature, rather than finding a contractor in your area who installs waterfalls, post on poolspaforum.com. That site has a LOT of pool builders as members (I tend to run them off here, when they start posting pool industry chemistry gobbledy-gook) . Some areas of the country, like California, have quite a few contractors that are heavily into elaborate pools with elaborate features. Florida contractors build pools for less than anywhere else in the country, and tend to focus on plain-Jane pools that they can install rapidly and cheaply.
