Poolside/Built-in Islands/Grills

I am currently building a pool that will have a full screen enclosure. We want to put in a built-in grill/island once the pool is complete (late august). The pool deck will be brick pavers on top of crushed lime stone.

DH wanted to know how do you plumb an island sink so it doesn't look stupid. We were thinking about going the cheap route and hook it up to one of the hose bibs and then I wanted to just install some PVC under the deck out to the side yard and let it drain there. We won't be putting chemicals down it.

Anyone have an easy DIY set-up?
