Replacing the coping on a vinyl pool

I have a 16x32 vinyl poll with Cinderella CP8 Deck Mount Liner Track .I want to install a interlock deck around the pool so I need to change the coping. Unfortunately the liner was changed just 2 years ago.

What I want is to remove this coping and replacing it with a proper liner track for stone coping. From one of the older threads I found the link to the Cinderella HM1 Horizontal Mount Liner Track , but there are two more options hm2 and hm3 .

Which one is the best option ? Is this something I would be able to do myself? All the pool companies I asked they want to replace the liner as well.

I live in Burlington, Ontario ,Canada. Could you please help me with some advice how this could be handled?
