So, between either adding too much stabilizer or using the last of my aquachem chlorinating granuals, my CYA is up to 80ppm. By looking at the chart it appears that I am basically required to double the amount of bleach I use. Is this true?

I don't know. I do know you want to keep your FC between 5 ppm and 10 ppm and shock by raising to 20 ppm. Once you are there it should be stable all summer and you won't need any more bleach than before to keep it there.
