I'm trying to determine how many gallons per hour my pump pumps. I found a plot on the Pentair website that plots ft. of water on the y-axis and gallons per minute on the x-axis.
My question is does ft. of water refer to the pump height above the pool water line? If not, what is it?

Feet of head = total resistance in your plumbing. The simple method is to use a pressure gauge (on your filter) and a vaccum gauge (into the bottom of your pump pot, or 1/4" drain plug). Pressure gauge x 2.31 + vaccum gauge x 1.13 = feet of head.
The long way is to measure your pipe length(diameter is important), plus using charts, coverting your fittings (90's, 45's, coupings, tees, etc) to equivalent feet of head, then adding it all up.
Most systems fall in between 35 - 70 ft of head.
You can probably use a generalized 50 - 60 ft of head.
