The pool hasn't been filled yet, it's a 16x30 IG gunnite/plaster. Once it is plastered, should I hose the new plaster everday to help curing, or leave it alone?

Steve, the plaster would prefer to be kept moist, this will help it set up stronger - a caution though, if you use the garden hose, take care not to directly spray the plaster or let rivulets of water run down one area as it could 'etch' the new finnish. A sprayer on mist is a good option for this (all you want to do is retard the setting a little, which keeping the plaster moist will do, the longer it takes the plaster to cure, the stronger it will end up)
However, I would suggest talking to the builder before doing this so that you don't accidently void the warrantee.

How long can you leave a freshly plastered pool before it needs to be filled?

I thought all pools were filled immediately after plastering? At least mine was.

That is what I thought too. They started filling mine within an hour after the plastering was done.

It's not plastered yet, sorry for the confusion. I was just asking about wether or not I should keep it wet in the original post. I didn't realize they actually fill it right after plastering. Cool.
The PB is coming Saturday to plaster/fill; 30 days later they're coming back to add salt. I'll get some Pics Sunday afternoon when filled.
We are excited! :D
here's a pic from a couple weeks ago:

Well the best thing to do is immediately fill up the pool once it is done finished to a hard trowel finish unless pebble. The reason being is small spider web cracks begin to form and well this is out of the contractor's control, but once pool is filled the web cracks will not be noticable and the pool being filled will help the plaster to set up.

By the way that white streak that is running down by your waterfall i would request your contractor to straight acid wash it because it may bleed through and you will see the discoloration in your plaster. It would be better to play safe then sorry.
