I have a SWG in ground pool and have noticed some of the flag stone is gradually eroding away. What is the best product out there that can be used to seal the flagstone to prevent this and not cause the stone to be slippery?

I recommend consulting a deck and stone company. It would depend on the quality of the stone, and what's most compatible with that particular flagstone. They would know best what's available to you.
Keep in mind that flagstone is naturally flaking and can delaminate on it's own, with some effect from the salt. Sealing and occasional hosing off your pool deck should keep it in check.
